Walking Taco Casserole is an easy and delicious twist on a classic favorite! Layers of seasoned ground beef, crunchy chips, and gooey cheese are baked to perfection, then topped with your favorite taco toppings. It’s a fun, crowd-pleasing dinner that’s perfect for busy weeknights!

Yes, Walking Tacos are gluten free as long as your corn chips and taco seasoning are gluten free.
how to make a walking taco bake
Add onions and ground beef to a large skillet and cook until onions are soft and meat is no longer pink. Drain off extra grease.
Stir in taco seasoning and water. Heat to boiling.
Reduce heat and stir in beans, Rotel and sour cream. Cook for 8-10 minutes or until hot throughout and slightly thickened.
Add a layer of corn chips to the bottom of a greased 13 x 9 baking dish. Sprinkle half of the shredded cheese on top and then ground beef mixture. Top casserole with the rest of the shredded cheese.
Cover dish with foil and bake for 15 minutes. Remove foil and bake for 5 minutes more or until cheese is melted and casserole is bubbly around the edges.
Remove from oven and top with remaining corn chips and any other favorite toppings.
Storage & Reheating
Fridge: Store leftovers in the refrigerator for up to 3 days. This casserole can be stored in the casserole dish covered in aluminum foil or I recommend scooping it into individual portions in airtight containers.
Keep extra toppings in separate containers.
Freezer: In a freezer safe casserole dish with an airtight lid, you can freeze this casserole. Just be sure not to add any of the toppings before freezing, save them for when it is thawed and reheated before you serve. Thaw overnight in the fridge.
Reheat Walking Taco Casserole covered in the microwave or on the stovetop with a little bit of water to add some moisture. Add extra toppings before eating.

Ingredients
- 1 pound ground beef
- 1 small onion chopped finely
- 1 package taco seasoning
- ½ cup water
- 15 ounces pinto beans drained
- 10 ounces Rotel original diced tomatoes and green chilis
- ½ cup sour cream
- 9.25 ounces corn chips divided
- 2 cups Mexican-style shredded cheese divided

- Green onions sliced
- Sour cream
- Guacamole
- Salsa
- Jalapenos
Instructions
- Preheat the oven to 350 degrees Fahrenheit. Spray 13 x 9 inch baking dish with nonstick cooking spray.
- In a large skillet over medium high heat add onions and ground beef. Cook until the onions are soft and the meat is no longer pink. Drain off any extra grease.
- Stir in taco seasoning and water and heat to boiling.
- Reduce heat to medium low and stir in beans, Rotel, and sour cream. Cook for 8-10 minutes or until heated and the mixture slightly thickens.
- Add a single layer of corn chips, about half the chips, to the bottom of the prepared baking dish. Sprinkle 1 cup of the shredded cheese on top. Then the ground beef mixture. Top the casserole with the remaining cheese.
- Cover it with foil and bake in preheated oven at 350 degrees Fahrenheit for 15 minutes. Then remove the foil and continue baking for 5 minutes or until the cheese is melted and the casserole is bubbly around the edges.
- Remove from the oven and top with the remaining corn chips and your favorite toppings.
- Serve immediately.
