I can’t decide which layer I like the most in this strawberry pretzel pie! The salty pretzels, cream cheese filling and sweet strawberry topping are a perfect combination. You get the sweet taste of summer in every single bite. If you have never used a pretzel crust for pie before, you are in for a huge treat!
This is a great way to use some of the juicy fresh strawberries you bring home from the U-pick or the farmer’s market. I also love to use fresh strawberries to make a really versatile Strawberry Sauce. We use it on so many things like pancakes, Angel food cake and more!

Pretzel Crust
- Crushed pretzels – You can use any type of pretzel.
- Sugar – The pie crust is perfectly salty and sweet.
- Butter – Because of the salty pretzels, you may want to use unsalted butter.
Cream Cheese Layer
- Cream cheese – Softened cream cheese is much easier to work with and will incorporate into Cool Whip much smoother.
- Cool Whip – You bet we are using Cool Whip to make this deliciously creamy layer of this pie.
- Sugar – Add some sweetness to this layer.
Strawberry Layer
- Strawberries – Washed and sliced fresh strawberries really bring out the flavor in this pie!
- Water – Cool or room temperature water to bring to a boil.
- Sugar – Add a little extra sweetness to this strawberry layer.
- Cornstarch – Helps the layer to thicken and set.
- Strawberry Jell-o – This is what will really boost that strawberry flavor for this top layer of the pie.
Can i use whipped cream instead of Cool Whip?
Cool Whip and whipped cream are usually pretty interchangeable but for this, I recommend sticking to Cool Whip because of it’s firmer texture.

The most common way to soften cream cheese to room temperature is to simply leave it on the counter for about 45 minutes. You can also submerge your cream cheese, in the foil packaging, in warm water for about 10-15 minutes. Lastly, it is possible to soften cream cheese in the microwave. Remove all packaging and warm the cream cheese in ten second increments until you reach your desired softness.

Add pretzels to a food processor and blend until they are finely crushed.
In a mixing bowl, add crushed pretzels, melted butter and sugar and mix until well combined. Press mixture into a 9-inch pie dish.
Bake the crust in a preheated oven for 10 minutes.
Remove and set aside to cool completely.
In a mixing bowl, beat cream cheese and sugar until smooth. Fold in Cool Whip and spread mixture over cooled pie crust. Chill for 30 minutes.
Meanwhile, in a saucepan combine water, sugar and cornstarch. Bring to a boil and cook for 2 minutes.
Add strawberry Jell-O and stir to dissolve. Remove from heat and cool for 15 minutes.
Place sliced strawberries on top of the cream cheese layer. Very carefully, pour Jell-O mixture over strawberries in an even layer.
Refrigerate about 4 hours, until set.

- When you are adding the cream cheese mixture on to the crust, make sure the mixture covers the whole crust and reaches the sides of the pan.
- Use a disposable pie pan if you plan to bring this to someone else’s house so you don’t have to worry about getting your plate back plus it’s easy clean up!

Ingredients
Strawberry Layer
- 2 cups Strawberries washed and sliced
- 1 cup Water
- ⅓ cup Granulated
- 1 Tablespoon Cornstarch
- 3 ounce Strawberry Jell-O (1 box)
Pretzel Crust
- 1 ½ cups Crushed pretzels
- ¼ cup Sugar
- 1/2 cup Butter melted
Cream Cheese Layer
- 6 ounces Cream cheese softened
- 2 cups Cool Whip
- ⅓ cup Sugar
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Add the pretzels to a food processor and blend them for a minute or 2 until they are all finely crushed.
- Add the crushed pretzels, melted butter, and sugar in a mixing bowl and mix until combined. Press the mixture into a 9 inch pie plate.
- Bake the crust in preheated oven at 350 degrees Fahrenheit for 10 minutes. Remove and let cool.
- In a mixing bowl with an electric mixer (hand or stand), beat cream cheese with sugar until smooth. Fold in Cool Whip. Spread over cooled pretzel crust. Make sure to get it all the way over to the edge. Refrigerate for 30 minutes.
- While the pie is cooling in the fridge, combine the water, sugar and cornstarch in a saucepan. Bring to a boil and cook for two minutes. Add strawberry Jell-O and stir until dissolved. Remove from heat and let cool for 15 minutes.
- Place sliced strawberries on top of the cream cheese layer. SLOWLY pour Jell-O mixture over strawberries in an even layer. Refrigerate until set about 4 hours
- Store in the fridge until ready to serve.
