- Sour cream – This is my secret ingredient to making the MOST creamy cheesecake filling. By the time it’s mixed into the cheesecake batter, you won’t even be able to taste it.
- Salt – A little bit of salt in the cookie dough base will help to balance out the sweetness.
- Baking soda – Use baking soda in the chocolate chip cookie dough to make sure that they rise and you don’t have a dense cookie crust.
- Chocolate chips – Grab your favorite chocolate chips — milk chocolate, semi-sweet, dark chocolate, they’ll all be yummy.
- Vanilla extract – Make sure you have plenty of vanilla on hand since you’ll need it in both the homemade cookie dough and the cheesecake mixture.
- White sugar – You’ll need white granulated sugar for both the cookie and the cheesecake.
- Brown sugar – Give the chocolate chip cookie the most rich flavor by mixing in brown sugar along with the white sugar.
- Eggs – Allow eggs to come to room temperature before mixing them into the cheesecake or cookie.
- Melted butter – Melted butter is the perfect thing to bring together the cookie dough.
- All purpose flour – Use all purpose flour to make the cookie crust!
- Oreo cookies – The perfect touch to tie this recipe together, crushed oreo cookies on top and a layer of Oreos in the middle.

How to Make Slutty Cheesecake Bars
There are essentially two separate sections to this recipe — making the cookie dough and making the cheesecake filling. But before we being, make sure you preheat your oven to 325 Fahrenheit and grease a 9×13 inch baking pan with cooking spray. I also like to line with parchment paper so they’re easy to pull out for serving.
Homemade Cookie Dough
Place melted butter and sugars into a medium mixing bowl and then mix until combined. Add egg and vanilla and mix again.
Then add baking soda, salt and flour and mix until just combined. Fold in chocolate chips, being careful not to overmix the dough.
Press the cookie dough evenly onto the bottom of the baking pan. This will be a very thin layer so that the cookie dough can bake up properly for this cheesecake bars recipe.
Place 24 of the oreos on top of the cookie dough covering as much as possible in a single layer.
Cheesecake Filling
Place cream cheese and sugar in a mixing bowl and beat them together on medium/low using a stand mixer or hand mixer. Once combined, add sour cream and beat together until completely smooth.
Add eggs one at a time, mixing by hand so that they do not get over mixed. Add vanilla extract and mix again.
Carefully pour the cream cheese mixture over the oreo cookies. Spread until you have an even layer. Then top with more broken oreo chunks.
Bake the Slutty Cheesecake Bars
Bake for 30-35 minutes, or until there is a slight jiggle in the center of the cheesecake. Once the bars are done baking, remove the slutty cheesecake bars from the oven and set the dish on the counter to get to room temperature.
When completely cooled, cover the cheesecake and place in the fridge for at least 3 hours to set up.
When you are ready to serve, drizzle cheesecake bars with salted caramel sauce and then cut into squares for serving.
How to Store Leftover Slutty Cheesecake Bars
For best results, slice before storing. You can either wrap each bar in plastic wrap or lay each slice on a little square of parchment paper. Then place into an airtight container.
FRIDGE: Store leftovers in the refrigerator for 3-5 days.
FREEZER: These slutty cheesecake bars also store well in the freezer for up to 3 months. Allow to thaw in the fridge before consuming.
How do you cut cheesecake bars neatly?
It is key to use a very sharp knife. However, my main tip is actually to dip the clean, sharp knife in hot water and then quickly dry it off. Use the warm knife to slice into the cheesecake bars. The warmth from the knife will cut through the chilled cheesecake really easy and leave little to no mess behind!
What kind of oreos should I use?
I personally just use the good ol’ classic Oreos, but you can use double stuf or even mega stuf! If you want to make a gluten free version of this recipe, use gluten free flour in the cookie dough base and gluten free Oreos.
You can change things up flavor-wise by using golden Oreos, chocolate filling Oreos, or even peanut butter Oreos.
Can I use store-bought cookie dough in slutty cheesecake bars?
These slutty cheesecake bars taste way better when you make your own cookie dough, but I totally understand the need to save on prep time. Feel free to use store-bought dough instead of making your own from scratch.
Pro Tips for the Best Oreo Cheesecake Bars Recipe
- Let the bars cool completely before transferring to the fridge. If you don’t allow them to cool them they will likely have a funny texture.
- Pour cheesecake filling evenly over the cookie base and tap the baking dish on the counter to remove air bubbles before baking.
- If you use a stand mixer instead of a handheld mixer, make sure you are using the paddle attachment to make the cheesecake filling.

Cookie Dough Base:
- ½ cup butter melted

- ½ cup sugar
- 1 egg room temperature
- 1 teaspoon vanilla
- 1 teaspoon baking soda

- 16 ounces cream cheese room temperature

- 2 Tablespoon salted caramel sauce for drizzling
