This Christmas treat is totally addictive with the perfect sweet and salty combo. Peanut Butter Ritz Cracker Cookies are an easy no-bake Christmas treat. Ritz crackers stuffed with peanut butter and dipped in chocolate.

No Christmas is complete without these quick and easy peanut butter ritz cookies. They are so easy to make with only three ingredients. In fact, you can even make ahead of time to store in the freezer. And since they are so easy to make they make the perfect treat for cookie swaps and exchanges.
Our family makes these sweet and salty treats every single year for Christmas and they are always the first gone on the Cookie Tray. Ingredients for Peanut Butter Ritz Cookies
- Buttery salted crackers – We always use Ritz, but you can grab off brand or another type of buttery and salted cracker.
- Creamy peanut butter – I do not recommend using a natural peanut butter as the oils tend to separate.
- Almond bark – We have used both chocolate and white almond bark. Grab whatever kind you want!

- Wax paper or parchment paper
- Baking sheet
- Microwave safe bowl
- Saucepan and heat safe bowl
- Silicone spatula
How to Make Peanut Butter Ritz Cookies
Lay out wax paper to put finished cookies on. If you plan on putting them into the freezer to help them set quicker, then use a lined sheet pan.
Place about a 1/2 – 1 tablespoon of peanut butter on a Ritz cracker and spread it out, depending on the ratio of peanut butter to crack and chocolate you desire.
Top with another cracker and repeat this process until all crackers are gone.
Melt almond bark in a double boiler until all lumps are out. If you don’t have a double boiler you can do this in the microwave, making sure to stir frequently so it doesn’t scorch.
Drop a sandwich cookie into the chocolate and make sure it’s covered. Then remove the cookie from the melted chocolate with a fork. Drag fork along the edge of the double boiler to scrape of excess chocolate.
Place the coated cookie on wax paper and repeat until all cookies have been dipped.
Once the cookies are set, place in a container and store in airtight container with wax paper between the layers of cookies.
How to Store Leftover Ritz Cracker Cookies
Transfer cookies to an airtight container and store in a cool dry place for up to a week. You can also store in the fridge to extend their life a bit, or keep the chocolate set if your kitchen is warm.
Want to freeze them? Freeze on the baking sheet and then transfer to an airtight container.
Can I use chocolate chips in place of almond bark?
Absolutely! Just keep in mind that chocolate chips are a bit easier to overheat than almond bark. You’ll need to be a bit more careful when melting so that the chocolate doesn’t seize. Chocolate candy melts will also work!
Do I have to use a double boiler to melt chocolate?
No, you don’t have to use a double boiler on the stove top! You can use a microwave safe bowl to melt the chocolate in the microwave. Heat in 30 second increments and stir well in between microwaving.
Pro Tips for the Best Ritz Cracker Cookies
- Before the chocolate sets, add some sprinkles to the top of these cookies! It’s a great way to theme them for the holidays. For an extra salty bite, sprinkle some sea salt over the top.
- Feel free to melt some white chocolate or colored candy melts to drizzle over the top of set ritz cracker cookies.
- Allergic to peanuts? You can use another nut butter in the middle of the ritz sandwich! Sunflower seed butter, almond butter, and cashew butter are all great options.

If I need to make 150 of these, how far in advance can I make them? (In other words, how long do they keep?) Can I freeze, and if so, what would I need to do to serve them after they’ve been frozen?

These work great for freezing! Make however many you need and freeze them in an air tight container, place wax paper between layers of cookies. Thaw them on the counter and serve!
