There are so many reasons to make this Hamburger Soup! It’s one of my favorite ways to get my kids to eat more vegetables. I don’t know if it’s the name — they love burgers — but they slurp every last drop when I make it! It’s also so easy to make. Hamburger soup is not one of those simmer-for-hours soup recipes and you can have it on the table in about 45 minutes start to finish.
There are a lot of hamburger soup recipes out there and I think you’re going to love this one. It’s basically a hearty vegetable soup with ground beef and it’s so savory, hearty and one of my favorite dishes to make when it’s cold. It tastes incredible!

Ingredients for Hamburger Soup
- Olive oil –
- Onion – Dice up a yellow onion or white onion to add loads of flavor to hamburger vegetable soup.
- Celery – If you’re not a fan of celery, you can omit it from this recipe.
- Carrots – I like to dice my carrots for this recipe so that all of the veggies are the same size.
- Garlic – Mince fresh garlic to saute with the vegetables before adding the rest of the soup ingredients.
- Extra-lean ground beef – Extra lean ground beef is key so ensuring that this soup isn’t too greasy.
- Canned diced tomatoes – Use petite diced if you’ve got picky eater. It’s easier to hide!
- Tomato sauce – Tomato sauce gives the broth for this soup an extra cozy flavor.
- Worcestershire sauce – Use low sodium Worcestershire sauce if you want to more easily control the sodium levels in this soup.
- Low-sodium beef broth – I like to use low sodium broth so that the soup isn’t extra high in sodium. You can also use chicken broth or vegetable broth.
- Russet potatoes – Feel free to use a different kind of potato! Yukon gold potatoes would be a great sub in this recipe.
- Frozen corn – Canned corn also works in this recipe if you prefer. Feel free to make some variations by adding other veggies like green peas.
- Frozen green beans – You can also use some canned green beans instead of frozen.
- Italian seasoning – This adds a slightly herby flavor to the soup!
- Salt and black pepper – Season up these hamburger soup ingredients with a bit of salt and black pepper.

How to Make Hamburger Soup
- Heat the oil in a large pot or dutch oven over medium-high heat. Add the onion, celery, and carrots. Then cook them in the oil until they’ve softened.
- Add the garlic and cook it with the other ingredients for about a minute. Then add the ground beef and break it up while it cooks. Once browned, drain off any excess grease from the pot.
- Place the rest of the ingredients into the pot, bring the soup to a boil, and then reduce the heat to maintain a simmer. Simmer it for 20 to 25 minutes or until the potatoes are tender.
- The added bonus is the aroma while it simmers! Is there anything better than the scent of something cozy and savory bubbling away on the stove?
- While it’s cooking all you have to do is give it a stir every so often. Once everything has simmered, dish it into bowls and enjoy!
Can I use ground turkey instead of beef?
Yes! Feel free to substitute ground turkey in this recipe. Whether you use ground turkey or beef you want to make sure the meat is very lean so you don’t end up with a lot of fat in the broth. Ground chicken also works in this recipe!
Can I make hamburger soup ahead of time?
This hamburger soup recipe is great to make ahead! It’s perfect for meal prepping because it keeps well in the fridge for up to three days. Or, you can freeze it for up to three months! Just be sure to store the soup in an airtight storage container or freezer-safe container.
I like to thaw it in the refrigerator and then reheat it on the stove or in the microwave when I’m ready to serve it.
What to serve with hamburger soup
This cozy soup pairs beautifully with sides like garlic bread and homemade breadsticks. I love to even make some fresh homemade biscuits or cornbread to serve with this dish
Don’t forget a cozy and warming dessert! Apple pie and a homemade pizookie are both tasty options.
Pro Tips for the Best Hamburger Soup
- For a creamy touch, add some shredded cheddar cheese to the top of each bowl.
- If you’d like, you can change up the flavor of this soup by using various spices. Kick up the spice, make the soup more herby, or simply just season it how you personally prefer.
- Make sure you drain the beef well before adding all of the other ingredients. Nothing is worse than greasy soup!

Ingredients
- ½ Tbsp olive oil
- 1 medium onion peeled and diced
- 2 stalks celery chopped
- 2 carrots peeled and chopped
- 3 cloves garlic minced
- 1 lb extra lean ground beef
- 1 14.5 oz can petite diced tomatoes
- 8 oz tomato sauce
- 2 tsp Worcestershire sauce
- 6 c. low-sodium beef broth
- 2 large Russet potatoes peeled and diced
- ½ c. frozen corn
- ½ c. frozen green beans
- ½ tsp Italian seasoning
- ½ tsp black pepper
- 1 tsp salt
Instructions
- In a large dutch oven or soup pot add olive oil, onion, celery and carrots. Sauted for 5-7 minutes, until softened.
- Stir in garlic and saute for 1 minute, followed be ground beef. Cook until the beef has browned for about 5 minutes. Drain off any extra grease.
- Stir in the rest of the ingredients. Increase heat and bring the soup to a boil. Reduce heat so it simmers and cook 20-25 minutes or until potatoes are tender.

Loved the quickness of this recipe and has great flavor. I used 2 cans of mixed vegetables in place of the green beans and carrots and added some corn from our previous meal I already had on hand. Left out the Italian seasoning as not our favorite spice. Will be making this again for sure.

Very comforting and tasty soup with plenty to freeze. The second time I made a variation when I didn’t have frozen corn or green beans ,by adding cabbage to the saute and a can of roasted diced tomatoes to the pot.
