What is Fruit Pizza Made of?
There are three parts to this recipe: the crust, the frosting, and the fresh fruit topping!
Sugar Cookie Crust Ingredients
- Softened unsalted butter – Remember to leave your butter out at room temperature before you start making the dough. That way it’s soft and easy to cream.
- Granulated sugar – This gives makes the crust lightly crispy edges but a soft and chewy center.
- Vanilla extract – You can also use the same amount of almond extract for a bit of a different flavor.
- Large egg – Allow your egg to come to room temperature so that it more easily mixes in with the other ingredients.
- Kosher salt – A pinch of salt helps to balance out the sweetness of the sugar cookie crust.
- Baking powder – Use a bit of baking powder so the crust rises and is the perfect texture.
- All-purpose flour – For best results, use the spoon and level method to measure your flour for a fail proof cookie crust.
Can you use salted butter?
Yes, if you use salted reduce the amount of added salt to 1/2 teaspoon.
Cream Cheese Frosting Ingredients
- Softened cream cheese – Like the butter for the crust, leave the cream cheese out at room temperature. This will ensure your frosting is nice and creamy!
- Softened unsalted butter – Leave you butter out to come to room temperature for the frosting too.
- Vanilla extract – Add extra lovely flavor to the frosting with some vanilla extract.
- Powdered sugar – If your sugar has a lot of lumps, sift it first before measuring it so your frosting ends up nice and smooth.
The Best Fresh Fruit to Use for Fruit Pizza
After you clean all of the fresh fruit, be sure to pat it dry so there’s no excess water. If you want to use canned fruit, drain it thoroughly and pat it dry. Here’s the fruit I chose to use:
- Diced fresh strawberries
- Blueberries
- Blackberries
- Raspberries
- Chopped kiwi
- Canned mandarin oranges drained
What other kinds of fruit can you use on fruit pizza?
The best fruit for easy fruit pizza is low-water content fruit. Juicy watery fruit, like watermelon, for example, will make your pizza soggy. So stick to fruit that’s not so watery.
It is also important to avoid any fruit that browns quickly, like bananas. Depending on your tastes, you can switch the fruit listed to other types like fresh peaches, grapes, mango, pineapple, or melon like cantaloupe or honeydew.
Can you use sliced fruit instead of chopped?
Sliced fruit does look pretty on the pizza but I find it makes it harder to slice into wedges. So, I recommend chopping or dicing larger pieces of fruit, like the strawberries and kiwi. They will still look nice and your pizza will look great even after you slice it. Small fruit, like berries, don’t need to be sliced.
Can you use frozen fruit?
I don’t recommend using frozen fruit for cookie pizza. It won’t look as pretty once it’s thawed and it also has more moisture that can make your pizza soggy.
Products Needed
- 12” rimmed pizza pan
- Mixing bowls
- Measuring cups and spoons
- Hand mixer or stand mixer
The Best Baking Pan for Dessert Pizza
I like to use a 12” pizza pan that is rimmed. I don’t recommend using a pan without a rim because you need sides to keep the sugar cookie dough crust uniform.
You can also use a 10×15” rectangle baking pan for this recipe – just press the sugar cookie dough into it and bake it for about the same amount of time.
How to Make Fruit Pizza
Crust: Make the sugar cookie dough base and then press it into the pan. Bake the crust until it’s lightly brown on top. Cool the crust completely before adding the frosting.
Frosting: Cream the butter and cream cheese until smooth. Then add the powdered sugar and vanilla and beat until combined.
Decorate! Spread the cream cheese topping over the crust. Decorate with the fruit and then chill the fruit pizza until you’re ready to serve it.
Can I make fruit pizza the day before?
If you want to get a head start, you can make parts of this easy fruit pizza recipe a day in advance!
You can make and bake the crust and then cool it to room temperature. Cover it tightly with plastic wrap and store it in the refrigerator overnight.
You can also make the frosting a day ahead and store it in an airtight container in the refrigerator. Allow it to sit at room temperature for a bit before frosting the pizza crust.
Wait to frost and decorate the pizza until the day you plan to serve it. This will ensure your pizza won’t be soggy.
How do you keep the cookie crust from getting soggy?
Wait to add the frosting and fruit until you are ready to serve the fruit pizza. It is also important to pat the fruit dry and avoid using fruit that is really watery.
Can you use refrigerated cookie dough instead of homemade?
Yes, I’ve tested this recipe with premade dough and it works well. I use dough that is already portioned into 24 cookie dough balls – just press them into the pan to make one unified crust.
If you use the prepared dough, reduce the baking time to about 10 minutes. The sugar cookie base won’t be as thick as the homemade one but it will work fine.
How long do leftovers keep?
Leftovers will keep for a couple of days in the refrigerator, but keep in mind the crust will soften and the fruit will make it soggy. The crust may fall apart on you but it will still taste good!
Do not freeze any leftovers.
