What are cucumber sandwiches?
They are tea sandwiches that originated in the United Kingdom. There are variations, but they are usually made with crustless white bread, some kind of spread like butter or cream cheese, and sliced cucumbers.
They’re dainty and pretty with the contrast of green from the cucumber and the white bread. For this reason, they are great for celebrations like baby showers and bridal showers.
Why You’ll Love these Cucumber Sandwiches
- It only takes 10 minutes to make 4 servings of these sandwiches. You can easily double or triple the recipe and make loads of these sandwiches to fill a platter and serve guests!
- These are light and refreshing, great for anything from elegant parties and afternoon tea to a simple snack time. They’re even a great quick appetizer!
- You only need 5 ingredients and some salt and pepper. One of the best quick snack recipes.
Ingredients for Cucumber Sandwiches
- Thinly sliced white bread – A soft loaf works best for this recipe! You can use another type of bread if you prefer, but white bread is most commonly used.
- English cucumber – This type of cucumber has fewer seeds and a sweeter, less bitter flavor than regular cucumbers. It’s great for these sandwiches!
- Cream cheese – For best results, leave it out at room temperature so that it can soften.
- Mayonnaise – Don’t substitute Miracle Whip unless you want a sweeter flavor to the sandwich.
- Minced fresh dill – Definitely use fresh dill and not dried. It adds so much flavor!
- Salt and pepper – Bring out the flavor of these sandwiches with just a sprinkle of salt and pepper.

How to Make Cucumber Finger Sandwiches
Beat the cream cheese in a mixing bowl until it’s fluffy. Then stir in the mayonnaise, dill, salt, and pepper until the mixture is well mixed and creamy.
Peel the cucumber and thinly slice it. Then trim the crusts off the bread slices and discard them.
Spread some of the cream cheese mixture onto all of the pieces of bread. Top one piece of bread with sliced cucumbers, and then place another piece of bread on top.
Slice the sandwiches in half diagonally with a sharp knife to make triangle-shaped sandwiches, garnish them with chopped dill, and serve!
How to Store Cucumber Sandwiches
The sandwiches are best served freshly made, but keep them in an airtight container if you need to store them. You can also cover them tightly in plastic wrap. They will keep in the refrigerator for 24 hours.
Can I make cucumber finger sandwiches ahead of time?
If you want to make these traditional cucumber sandwiches ahead of time, be sure to add a layer of cream cheese spread on the bottom piece of bread and the top piece of bread. It will keep the cucumber from leaching too much liquid that can make the sandwiches soggy. I wouldn’t make them more than a day in advance.
How do you cut a sandwich nicely?
To avoid smushing the bread and making a mess, be sure to remove the crust before building these sandwiches. If you plan on cutting them into shapes, then cut the bread first before you add the cream cheese and cucumbers.
Cut the sandwiches cleanly by using a very sharp knife and pressing down firmly and quickly in the middle of the sandwich.
How do you slice cucumber into thin slices?
When you learn how to make cucumber sandwiches, you’ll realize that the thinner the slices of cucumber are, the better. To achieve best results, use a very sharp knife and slice slowly and evenly. You can also use a mandolin and get guaranteed even slices.
What to Serve with Cucumber Sandwiches
These yummy finger sandwiches go well with tons of different appetizers and bite sized foods. Mini quiche cups, deviled egg sandwiches, and sunshine salad would all be so yummy!
Beverages like sparkling mint lemonade would go great with these sandwiches.
Serve some elegant sweets like lemon sugar cookies and lemon lush dessert would be delicious following cucumber sandwiches.
Pro Tips for the Best Cucumber Sandwiches
- You can create fun shapes by using cookie cutters to cut the bread. They don’t have to be triangles! If you opt to make shapes, cut the bread first and then assemble the sandwiches.
- After cutting the cucumbers, pat them dry with paper towels to remove excess moisture. This will help keep them from sliding out of the bread.
- For best results, serve these sandwiches immediately after you make them!
If you have celebrations and parties planned for this spring and summer be sure to add these cucumber tea sandwiches to your plan! They are a classic and always a hit when I make them.
