Crock Pot Meatloaf & Veggies

This Crock Pot Meatloaf is topped with Ketchup and made in the slow cooker with carrots and potatoes! Throw this delicious meatloaf in your slow cooker this week for an easy dinner recipe that the entire family will love.
Anyone else love meatloaf, yet hate how long it takes to make? It’s kind of out the question for a quick weeknight meal in my book! Some of our favorites include Mini Meatloaf, Chicken Bacon Ranch Meatloaf, Italian Cheese Stuffed Meatloaf, and Cheesy Meatloaf, but these happen on the weekend for sure. They do make a perfect Sunday Dinner that’s for sure!
Ahhhh weekends they are good for a lot of things, not only meatloaf aren’t they?
Our Saturday was a busy one that’s for sure! Harvest is in full swing out at my parents farm and this is the first time we went out to the farm to participate in the festivities.
I was also reminded quickly how nothing goes as planned on the farm. You have to be able to roll with the punches and change your plans as you go that’s for sure. First, I was delivering lunch to the field. As I was walking out the door my phone rang, nope, beans are to wet so go meet the guys at the farm place.
I get there and then they are working on a truck that broke down. That does not go as planned and takes up 2+ hours of the day. Whoops. Let’s just say they sent the wrong fuel filter, something broke off and I was supposed to run to the mechanic to get this fixed. I’m about ready to leave and suddenly I get a text to bring the part back because the mechanic is coming out the farm. Seriously. I can’t keep up!
Ingredients Needed
- JENNIE-O® Ground Turkey
- Eggs
- Panko Bread Crumbs
- Ketchup
- Onion
- Carrots
- Potatoes
- Seasonings – salt, pepper and olive oil

How to make Crockpot Meatloaf
- Spray inside of the slow cooker with non-stick cooking spray.
- Mix together turkey, eggs, bread crumbs, ketchup, onion and seasoning.
- Form a loaf and place it inside the slow cooker.
- In a separate bowl mix together the carrots, potatoes, 1/2 tsp salt and olive oil.
- Place around the meatloaf in crock pot. Top meatloaf with ketchup if desired.
- Cook on until the veggies are cooked through and meatloaf’s internal temperature is 165 degrees.
The day ended with us bringing a big meal of Crock Pot Italian Chicken out to the guys which they happily gobbled up! Nothing went wrong there thankfully! I know they would love this Crock Pot Meatloaf and Veggies just like we did!
Tips & Tricks!
- You can prep this the night before. Shape the meatloaf and place it in the crock pot with vegetable in advance. Refrigerate for up to 12 hours.
- Avoid over mixing your meat as it results in a tougher meatloaf. Mix the ingredients until they have just combined.
- Sprinkle a little brown sugar in the ketchup for a sweeter glaze.
- Broil the meatloaf after cooking it to get the glaze super stick and delicious.
- Leftovers are good for up to 3 days in the refrigerator.
- You can also freezer slices of meatloaf in airtight containers for up to 2 months.
- The internal temperature of the meatloaf should be 160 degrees F when cooked through.
- Got leftovers? Make a delicious meatloaf sandwich. Simply toast a hearty bread and warm up your meatloaf to be the sandwich filling.
Can you cook meatloaf in a crock pot?
Absolutely! I don’t know why people don’t do this more often! Crockpot Meatloaf is so easy and makes an entire dinner with so little effort! It’s less likely to dry out or be tough because of the cooking process using the slow cooker.
Secondly it’s ready when you get home. I know with kids in activities and them wanting to eat the moment we get home this is a big plus.
How long does meatloaf take to cook in a crockpot?
On high crock pot meatloaf will take about 4 hours – low 7-8 hours. Cook until the vegetables are tender and the internal temperature of the meat is 165 degrees. Slow Cooker Meatloaf cooks up so deliciously in the crockpot!
Can I make it in the oven instead?
Yes! Prepare it and then instead of placing in your crock pot place it in a loaf pan. Brush ketchup mixture on top and place in the oven and bake at 350 degrees F for about 55 minutes or until meat is no longer pink in the middle.
You could also shape into a loaf and place on a baking sheet with aluminum foil, but I feel that the loaf pan provides a more moist meatloaf.
Remove from oven and let rest 10 minutes before serving.
Can I substitute the ground turkey for ground beef?
Yes, you can! It will be great either way, just pick which one you prefer. We recommend using a 90% lean ground beef if you use beef.

Ingredients
- 1 lb JENNIE-O® Turkey
- 2 eggs
- 1 c. Panko Bread Crumbs
- 1/2 c. ketchup + plus more to top meatloaf
- 1/2 c. chopped onion
- 1 1/2 tsp salt divided
- 1/2 tsp pepper
- 1 Tbsp olive oil
- 1 lb baby carrots
- 1 1/2 lb potatoes cleaned and diced
Instructions
- Spray inside of crock pot with non-stick cooking spray.
- In a large bowl mix together turkey, eggs, bread crumbs, ketchup, onion, 1 tsp salt and pepper. Form a loaf and place inside the slow cooker, making sure the meatloaf is not touching the sides.
- In a bowl mix together the carrots, potatoes, 1/2 tsp salt and olive oil. Place around the meatloaf in crock pot. Top meatloaf with ketchup if desired.
- Cook on high 4 hours or low 7-8 hours or until veggies are cooked through and meatloaf's internal temperature is 165 degrees.

Oh and also, I saw a comment on youtube (crockpot meatloaf) and they said that they wrap in foil potato’s and put it in the crock with the meatloaf) would that work in a 3 qt round crockpot?

We use Organic ground turkey all the time.
My question is, I have a old 3 quart crockpot (the round crock not oblong)
Is your crock pot 3 quart (round) one that you make your meatloaf with?

Apart from a fussy 7yo, this has become a firm favourite in our house! Could you use the meatloaf mix and make it into big/jumbo sized meatballs? We’re new to experiencing a meatloaf, so not sure 🙂

This was fantastic! Followed the recipe exactly, and it turned out great. One question- would the instructions be the same if I were to double the recipe? Can I just double the ingredients and leave the cook time the same, or would you recommend different instructions? (Trying to feed 5 ppl) Thx!

It might take a little bit longer to cook the meatloaf but I think it would cook through in about the same time!

I actually used ground turkey for this recipe but you can use ground beef if you’d like! You can use really any percent fat but I 85/15 is what we typically use.
