I adore a delicious Crock Pot recipe especially when it’s this amazing Balsamic Crock Pot Roast Beef with potatoes and carrots. You put the beef roast in the slow cooker in the morning along with your vegetables. Then you top it with a mouthwatering Balsamic mixture and let it cook all day. The result is a melt in your mouth roast that is tender and falls apart, plus carrots and potatoes. It’s an entire meal in your Crock Pot. Slow Cooker Pot Roast is perfect for busy weeknight dinners!

A lot of people associate the beloved crock pot with the winter months, but I’m here, jumping and screaming from the rooftops, to tell you not to put that baby away.
If you already did, dust it off and give it a hug!
The crock pot is perfect for hot summer days when you don’t want to heat up your entire house and you still want a fabulous home-cooked meal. Plus, summers are crazy busy. Like super crazy.
So, who doesn’t like a quick meal you can throw in the crock pot and forget about then come home too? {Picture me jumping up and down right now waiving my hand} ?
I think I could drink it with a straw.

Crock Pot Roast Beef
Growing up in the Midwest on a family farm means that we often had meals full of meat and potatoes.
My husband also grew up this way but I love that I can serve that to my family and still mix it up a little with that balsamic.

Do you have to brown a roast before putting it in the crockpot?
You can brown your roast before putting it in the crockpot, it will add another layer of flavor. Best thing with THIS recipe is that bit of balsamic vinegar adds a subtle flavor that is quite fabulous without the extra work!

Do you put water in a crock pot to cook a roast?
The slow cooker is made for trapping the steam which tenderizes your meal. This recipe uses both beef broth and balsamic vinegar to tenderize the meat and this also keeps it moist.
Why is my pot roast tough?
Usually, because it’s not been cooked long enough OR has been cooked too long in the slow cooker without enough moisture resulting in a dry roast.

I’m all about convenience as you well know so that’s why I love using my Crockpot for roasts, but sometimes I forget to plan ahead and that’s when I love making this Instant Pot Pot Roast!
Steps to make Slow Cooker Pot Roast
- Whisk together beef broth, brown sugar, vinegar, soy sauce, salt, red pepper flakes and garlic in a small bowl.
- Place beef roast in the crockpot. Add the carrots and potatoes.
- Pour liquid mixture over the beef and vegetables.
- Cook on low for 6-8 hours.

Ingredients
- 4-5 lb beef roast
- 1 1/2 c. beef broth
- 1/2 c. brown sugar
- 1/4 c. balsamic vinegar
- 1 Tbsp soy sauce
- 1 tsp salt
- 1/4 tsp crushed red pepper flakes
- 3 cloves garlic pressed
- 1 lb baby carrots
- 2 lbs baby red potatoes quartered
Instructions
- In a small bowl whisk together beef broth, brown sugar, balsamic vinegar, soy sauce, salt, red pepper flakes and garlic.
- Place beef roast in crock pot. Top with carrots and potatoes. Pour liquid mixture over the beef, carrots and potatoes.
- Cook on low for 6-8 hours.

I noticed your beef didn’t have any fat in it. How did you find one like that, and should I trim mine if it does?

You can trim some off if there’s a lot of extra, but leave some because you want some marbling to make it nice and tender and juicy!

Can you use a frozen roast?

It can be, but we don’t recommend starting with a frozen roast because it sits in the food safety danger zone temp to long in a crock pot.

I HAVE DISCOVERED I AM SODIUM DEFICIENT, YOU HAVE SOY SAUCE AND SALT WHICH MAKES THIS RECIPE VERY HIGH IN SALT COULD YOU TELL WHAT I COULD USE IN PLACE OF THE SALT AND SOY SAUCE THE RECIPE SOUNDS DELICIOUS.

Hi Beverly. Thank you for your question. You could try using NoSalt (or another non sodium salt alternative that you can find) and coconut or liquid aminos might be an option for the soy sauce! Hope that helps!

This recipe would have turned out so much better had I not put in any brown sugar at all. I put in less than the recipe called for and I still felt like I had spoiled a good roast. I love the savory taste of pot roast with carrots and potatoes and if you do too, don’t add any sugar!!!

This was the best roast ever. I don’t even like roast. I made it for my parents and kept some for us and made french dip sandwiches today that were the bomb. I added some of Johnny’s Au Jus liquid from a bottle to the gravy left. I did add onions to the roast and 1/2 tsp of sage(my Granny always did that) This is a 10 star keeper
