With only 5 ingredients these Chocolate Caramel Brownies are a quick and easy dessert recipe that anyone can make. It’s perfect for getting the kids into the kitchen too. The brownies are made with a German Chocolate Cake Mix that’s filled with caramel and chocolate chips.

Chocolate caramel brownies sound so fancy, right? They definitely look fancy, but in reality they are so easy to make. Which is great because you’ll want to make these on repeat once you give them a try! And if you throw in these Chocolate Lava Cakes to your dinner menu every now and then, people will think you’re a five star chef!

When I make these, no one ever guesses that they’re German chocolate cake mix brownies because they taste like they’re made completely from scratch. You are going to love this recipe!

Ingredients for Chocolate Caramel Brownies
- German chocolate cake mix – For this recipe, we’re using German chocolate cake mix to make the brownies. It makes the best brownies! However, a regular chocolate cake mix will work as well.
- Chocolate chips – You can use semi-sweet chocolate chips, milk chocolate or dark chocolate, whichever you prefer.
- Evaporate milk – You will need evaporated milk for both the brownie batter and the caramel sauce. It helps to make this a truly decadent dessert.
- Caramels – Instead of making caramel sauce from scratch, I like to use caramel candy to make the sauce. It makes a sauce that is soft and gooey. It’s really easy to make.
- Butter – Both salted and unsalted butter will work in this recipe! You just need it to help combine all the cake mix together.

For this recipe, we’re using German chocolate cake mix to make the brownies. It makes the best brownies!
You will need evaporated milk for the brownie batter and the caramel sauce.
Instead of making caramel sauce from scratch, I like to use caramel candy to make the sauce. It makes a sauce that is soft and gooey. It’s really easy to make.
How to Make Chocolate Caramel Brownies
To start, make the caramel sauce first. Let the caramels, with half of the evaporated milk, melt in a saucepan over medium heat.
Stir the mixture frequently until smooth. Then take it off the heat and set it aside to cool while you make the brownies.
In a mixing bowl, combine the cake mix with the rest of the evaporated milk and melted butter. You don’t need a mixer, it’s easy to mix up with a spoon or silicone spatula.
Spread half of the batter in a prepared baking pan. The rest of the batter will be added after you bake the first layer. Bake the brownies for six minutes at 350°F.
Once the base brownie layer is baked, sprinkle the chocolate chips over the top. Pour the caramel sauce over the chips.
Drop the remaining brownie batter by the spoonful over the top of the caramel sauce.
Bake the brownies for 15 to 18 minutes. Let them cool completely before slicing and serving.
How to store chocolate caramel brownies
Store your cooled brownies in an airtight container, and they will keep well for a few days at room temperature. You can store them in the fridge for up to a week! I do not recommend freezing any leftover chocolate caramel brownies as the texture may be funky once they thaw.
Can I use homemade caramels instead of store-bought candies?
I’ve only tested this recipe with store-bought caramels and not homemade caramels. I can’t say how it will turn out with homemade ones, but if you try it, please let me know how it worked for you!
How do I cleanly cut chocolate caramel brownies?
To easily cut through the homemade caramel sauce and the brownies, use a sharp, warm knife to slice! It’s also important to wait for the brownies to cool a bit so that the caramel layer has time to set. Warm a sharp knife by dipping it in hot water and then drying it off with a towel. Then quickly use it slice through the brownies, cutting even sized squares.
What can I add to chocolate caramel brownies?
Shredded coconut would be so tasty on these brownies! You can also add some nuts like chopped pecans or walnuts to the top brownie layer. For salted caramel brownie recipe twist, add some flaky sea salt to the top of the caramel layer and/or on top of the brownies. For depth of flavor, mix vanilla extract into the brownie batter! And of course, serve a warm brownie with a scoop of vanilla ice cream for the perfect combo.
Pro Tips for the Best Brownies!
- Remember to disregard the cake mix box instructions and use the ingredients listed in my recipe to make the batter. You want to make rich, fudgy brownies instead of cake.
- Don’t try and slice the brownies while they’re still warm, they will just be a big mess! You want the caramel to set up, so leave them to cool fully before serving. You can stick them in the refrigerator or even the freezer if you want to speed up the cooling process.
- Be careful not to over mix the brownie batter so that your brownies stay fluffy and tender.

Ingredients
- 5 ounces evaporated milk divided
- 12 ounces caramels (1 package)
- ¾ cup butter melted
- 15.25 ounces German Chocolate Cake Mix (1 box)
- 12 ounces chocolate chips
Instructions
- Preheat oven to 350 degrees Fahrenheit. Grease a 9×13 inch baking dish with nonstick spray and set aside.
- In a medium size sauce pan melt caramels with ⅓ cup evaporated milk over medium heat, stirring frequently. Set aside to cool.
- While caramel is cooling mix dry cake mix, ¾ cup melted butter and ⅓ cup evaporated milk with a stand mixer or hand mixer.
- Spread ½ of the cake mixture on the bottom of prepared 9×13 pan. Place in preheated oven at 350 degrees for 6 minutes.
- Take out of oven and caramel over the top of cake mix then sprinkle with chocolate chips. Drop remaining cake mix on top by the spoonful.
- Place back in oven and bake for 15-18 minutes or until cake mix is set and edges are just beginning to brown.
- Remove brownies from oven and let cool before serving.

I’m not sure what I did wrong since I followed the directions exactly, but I just made these and it looks nothing like the picture. My spoonfuls of the batter on top just kind of sat there in lumps and didn’t spread out over the caramel and chocolate at all. I haven’t tried them yet as they are just out of the oven. I was going to take them to a party we are going to later, but I don’t know about that now. They don’t look very nice.
