Ahhh Christmas is almost here and I’m sitting here with presents to wrap, presents to buy, decorations to put up, Christmas cards to mail, treats to make and I’m starting to get a bit worried! Let alone all the “normal” stuff I have to keep up on!
Anyone else feeling like they might crack? I start to have heart palpitations whenever I start thinking about my list. How am I going to get it all done while providing my family with clean clothes, homemade meals and a happy Mom?
Thank goodness for online shopping. It saves me! It’s so much easier to hop online and order what I need for gifts than to spend hours upon hours looking for the perfect gift at six different stores. What on earth did people do before it?
I know part of this is self-inflicted like usual. I feel this pressure at the holidays to go all out on the treat making and baking. I have this idea in my head that because I’m a blogger everyone expects me to have this elaborate tray of goodies that I have slaved over. Is this true friends? Do you expect this of me?
Therefore, I print about fifteen recipes out that I want to tackle and make to impress everyone. In all actuality I really just want to make a quick snack mix that takes 5 minutes and call it good. Someone tell me this is completely acceptable!
One thing that keeps me sane around the holidays is easy meals. I’m all about fast, easy and simple meals that the entire family loves. My girls love breakfast for any meal and are always more than happy when they are served it for breakfast, lunch or dinner! For some reason I always feel rebellious when I serve breakfast for dinner and I kind of love it!

Cheesy Bacon Egg Hash Brown Skillet

Ingredients
- 1 3 oz package al fresco Chicken Bacon, diced
- 1/4 c. chopped onion
- 2 tsp olive oil
- 1 20 oz package Simply Potatoes Shredded Hash Browns
- 1/2 tsp salt
- 1/4 tsp pepper
- 6 eggs
- 3/4 c. Colby Jack Cheese
Instructions
- In a large skillet cook onion in olive oil over medium heat until translucent. Add chopped bacon and heat through about 1 minute.
- Stir in hash browns, salt and pepper. Cook, uncovered, over medium heat 10 minutes or until bottom of hash browns are golden brown. Turn hash browns.
- Make six evenly spaced wells in the potato mixture. Break one egg into each well.
- Cook, covered, on low 8-10 minutes or until eggs are set and potatoes are cooked through. Sprinkle cheese over the top and let stand until melted.
