Breakfast hash is a classic recipe that everyone should know how to make! This one skillet dish is loaded with flavor and packed full of protein. Whether you need a quick and easy breakfast or you are looking for something to round out your brunch menu, this breakfast hash fits the bill. I love to pair it with my morning caramel latte, and its always a wonderful side with some strawberry pancakes too!

This simple recipe comes in handy during the summer time since I don’t have to turn on the oven and heat up the house. Instead, I just dice up some bacon, potatoes, and a few other ingredients and get to making a hearty hash. You’ll love this tasty recipe!

Ingredients for Breakfast Hash Recipe
- Bacon – Grab a pack of your favorite bacon at the grocery store. I like to use thick-cut bacon, but any kind will work!
- Onion – You can use yellow or white onion in this breakfast potato hash recipe.
- Red bell pepper – While I prefer the flavor of red bell pepper, you can use green, yellow, or orange bell peppers too.
- Russet potatoes – feel free to use red potatoes or yukon gold potatoes in place of the russets.
- Garlic powder – Add some tasty flavor to this breakfast hash with a bit a garlic powder.
- Paprika – Take this dish to the next level with a bit of paprika seasoning everything well.
- Salt and Black Pepper – Bring out the flavors of this dish with a bit of salt and pepper.
- Eggs – Breakfast just isn’t complete until you have some eggs! Am I right?
- Shredded cheddar cheese – Shredded cheddar is my personal breakfast favorite, but you can use other types like Monterey jack, Colby jack, or Mexican cheese.
How to Make Breakfast Hash
Heat a large skillet over medium heat and the add the bacon and saute until golden and crispy. Use a slotted spoon to remove the bacon to a paper towel and leave the bacon fat in the pan.
Add the diced onion and red bell pepper to the pan and saute in the bacon fat for one minute to soften.
Place the diced potatoes into the skillet, and then add garlic powder, paprika, kosher salt, and pepper to the pan. Cook the potatoes for 12 to 14 minutes, stirring often until the potatoes can be easily pierced with a fork.
Drain out any excess grease and then add the bacon back into the pan and stir for an additional 1 to 2 minutes.
Use a spatula to create 4 wells in the hash. Crack an egg into each well and cook until the eggs are done to your liking. You can add a lid to the pan to cook the eggs through faster, about 8-10 minutes.
When the eggs are half done add the cheese to the top. Remove the breakfast hash from the heat and serve immediately.
How to Store Leftover Breakfast Hash
For best results store breakfast hash in individual portions in airtight containers. Allow the hash to cool completely before storing.
FRIDGE: Once the leftovers have cooled, store in the refrigerator for up to 4 days.
FREEZER: Cooked potatoes don’t often freeze and reheat well, but you can freeze these leftovers if you would like. Store in an airtight container and store for up to 3 months. Allow to thaw before reheating.
How to Reheat Breakfast Potato Hash
I recommend reheating leftovers on the stovetop for best results. Just add a little bit of oil or butter to a hot skillet and reheat until warmed through.
You can reheat leftovers in the microwave too.

Protein: While this recipe calls for bacon, you can use other meats like breakfast sausage, chorizo, ground beef, ground pork, and diced ham.
Veggies: Feel free to add more veggies like mushrooms, spinach, zucchini, and carrots. You could even change up the potatoes and use something like sweet potatoes.
Other: Add tons of flavor with different fresh herbs and spices. You could even use some salsa or hot sauce to give this hash a little bit of kick.

I love to serve this savory dish with sweet breakfast favorites. It goes wonderfully with chocolate chip pancakes, cinnamon roll casserole, and baked french toast.
But you can also serve it with classics like biscuits, muffins, and scones. Of course, buttermilk pancakes are my favorite to serve with breakfast hash, but there’s so many tasty options to pair with it!

- For the most gooey results, shred your own cheese! Pre-shredded cheese has anti-caking agents on it that prevent it from melting well.
- Make sure you evenly dice the potatoes, bell peppers and onions so that they all cook through.
