Begin by greasing a 9×13 inch baking dish with non stick cooking spray and then set it to the side.
Then cut the biscuit dough into quarters with clean kitchen shears or a sharp knife. Line the bottom of the pan with the cut biscuits.
Brown the ground breakfast sausage in a large skillet, then drain the grease. Sprinkle the cooked sausage over the biscuit pieces.
In a mixing bowl, whisk together the eggs and milk until well combined. Then pour the mixture over the sausage and biscuits. Cover with plastic wrap or foil and place in the fridge until morning.
Go ahead and mix up the gravy too! Melt 5 tablespoons of butter in a saucepan and then whisk in the flour until it makes a paste. Add salt and pepper and whisk to combine.
Whisk in the milk over a medium high heat and bring the mixture to a boil, stirring constantly. Reduce to a simmer for 2-3 minutes until the gravy thickens. Once done, set it aside to cool and then place it in the fridge until morning.
When you’re ready to bake in the morning, preheat your oven to 350 degrees Fahrenheit. Remove the casserole from the fridge and allow it to come to room temperature while the oven preheats.
Warm the gravy in the microwave or on the stovetop until it is pourable. Then pour it over the egg casserole and cover it with aluminum foil.

Has anyone tried making it and freezing it yet? We are getting ready to PCS (Military move) and this seems like a delicious dish for the last week in the house – but need it to be already made and frozen. If not, I will try it out and let you know.

Assembly this the night before would sure help on busy mornings. Pinned and would love to include this in a Christmas breakfast roundup with link back.

Mine also took a lot longer to bake than the recommended time frame. I will save the recipe for future use but just plan for longer bake time.
NIKKI says
Toooook sooooo long to cook through. Turned into an hour and a half of cooking and cold side potatoes.
Amy says
I made this last night like suggested. Got up this morning and put it in the oven as directed and it took over 1.5 hours to bake. I jacked up the heat to 400 after an hour, recovered and baked for an additional 35 mins. It finally set-up, browned and bubbled around the sides. Was very good and received rave reviews, but took much longer than I expected.
lori says
I wondered about the time. I have a very similar breakfast casserole recipe that I have used for years and it takes every bit of 1 1/2 hours to bake.
Tiffany says
Has anyone tried to make this in the crockpot? Do you honk it would work?
Julie Evink says
I’m sorry I’ve never tried it Tiffany! Let me know if you do!
Alexis says
This tasted good, but I had to double the gravy and there was still NO gravy, it must have soaked into the rest of the caserole but the sad thing is, it was still dry!!! The flavor was fine, but both my boyfriend and I were dissapointed by this. Now I will have to make some plain busciuts and gravy this week to make it up to both of us!
Paige says
Do you think this could be made without refrigerating it overnight? Just to go head and make gravy and bake right away?
Rachel says
Yes! You can just make and bake the morning of as well.
