Ingredients for Green Bean Bundles
- Green beans – Thinner ones work best because they cook faster.
- Sliced bacon – Don’t use thick-cut, you want this to cook quickly in the oven so it is ready the same time the green beans are.
- Sauce– Mixture of garlic salt, melted butter, brown sugar, black pepper to give a delicious taste. You could skip this and they are still delicious!
- Chopped parsley – For garnish, but this is optional.

How to Make Bacon Wrapped Green Bean Bundles
For this recipe, it’s important that the bacon and green beans are done cooking at the same time. So, you will want to precook the bacon first – this gives it a head start and allows it to render some fat before you wrap it around the beans.
Line a large baking sheet with foil and place the bacon strips in an even layer on it. Bake them for 10 minutes at 400°F. You aren’t cooking them all the way – just long enough to render some of the fat.
Once the bacon is precooked, set the pan aside while you prepare the rest of the dish.
Like the bacon, you will want to precook the green beans, too. Except instead of cooking them in the oven, you will cook them for a few minutes in boiling water. This is called blanching and it does two things: partially cooks them and also helps preserve their bright green color.
Before you do this step, you will need to prepare an ice bath. Place ice cubes in a large bowl with water. You will plunge the hot greens beans into the cold water to stop the cooking process after you blanch them.
Bring a large pot of water to a boil. Once boiling, add the green beans and boil them for two to three minutes. Drain them and immediately place them in the ice bath to stop the cooking process.
Once they are cooled, drain them again and pat them dry with a kitchen towel.
Mix the garlic salt, butter, brown sugar, and pepper in a small bowl. Pour over the green beans and toss to coat them.
Bundle together eight to ten green beans and wrap them with a slice of bacon. Place the bundle seam-side down on a prepared baking sheet. Repeat with the rest of the green beans.
Bake the bundles for 15 to 20 minutes at 400°F or until the bacon is crispy. Place them on a serving platter and sprinkle parsley over the top as garnish.
How to Make Bacon Wrapped Green Beans Ahead of Time
This is a great side dish to prep ahead – you can do most of the steps a day in advance!
- Precook the bacon in the oven.
- Blanche and dry the green beans.
- Toss them in the glaze and wrap them with bacon.
At this point, you can place them on a baking sheet and cover it with plastic. Keep it in the fridge until you are ready to bake the bundles.
Bake them as instructed, but you may need to add a few minutes of cooking time if you bake them straight from the refrigerator.

No, you don’t have to soak them. Cooking them for a few minutes in boiling water before you bake them is enough to soften them so they’re not chewy.
It’s important to use fresh ones for this recipe. If they are old and dried out they will not be as soft and tender when they are cooked. Fresh green beans will snap when you break them in half – they shouldn’t be limp.
For this recipe, they should be soft when they are done cooking. If they are chewy they are probably undercooked.

How to Reheat Leftovers

Ingredients
- 1 pound green beans preferably french green beans or thinner green beans will work
- 10 slices bacon do not use thick cut
- 1 teaspoon garlic salt
- ¼ cup butter melted
- 2 Tablespoon brown sugar
- ½ teaspoon pepper
- 1 Tablespoon chopped parsley optional
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Line a large baking sheet with sides with aluminum foil. Place the bacon on the sheet pan and bake for about 10 minutes. The bacon will not be cooked.
- Trim the ends of the green beans.
- Bring a large pot of water to a boil. Place the green beans in the pot and cook for 2-3 minutes or until just tender.
- Drain green beans in place in a bowl of ice water to stop the cooking process.
- Pat the green beans dry.
- In a small bowl mix together the garlic salt, butter, brown sugar and pepper. Pour mixture over the green beans and toss to coat.
- Take 8-10 green beans and place on one end of a slice of bacon. Roll the green beans up with the bacon. Place seam side down on a sheet pan lined with aluminum foil or sprayed with non-stick spray.
- Bake in a preheated oven at 400 degrees F for 15-20 minutes or until bacon is crispy.
- Sprinkle with parsley if desired and serve immediately.
