It’s probably my most favorite way ever to make grilled cheese now. The salty bacon with the melty, gooey cheese is a combo that just never gets old.
This is one of those variations on a classic that you wonder “why wasn’t it always made this way?” It’s seriously that yummy! I’m a firm believer that bacon makes everything better. I mean, it makes green beans better, so it really is a magical food — am I right? You’re going to love this easy bacon grilled cheese recipe!

Ingredients for Bacon Grilled Cheese
- Bacon – Grab your favorite bacon at the grocery store and pan fry it for this recipe. You can also cook bacon in the oven if you’d prefer! I like to use thick cut bacon in my grilled cheese for the most bacon flavor.
- Texas toast – Using thick cut bread is key here! Since there’s bacon added to this grilled cheese, you need something like Texas toast to hold up to the extra ingredients.
- Mayonnaise – Instead of making grilled cheese in butter, spread mayo on the bread. It makes for the BEST grilled cheeses. Trust me, you’ve gotta try it on this bacon grilled cheese sandwich.
- Cheddar cheese – Some people swear by American cheese making the best grilled cheese sandwiches. I say, cheddar cheese is the way to go! However, you can use whatever kind of cheese you want — sharp cheddar, Monterey jack cheese, mozzarella, even pepper jack!
How to Make Bacon Grilled Cheese
- Spread the mayonnaise on 1 side of each piece of bread, and set it aside. Place the bacon into a hot skillet and cook to your desired doneness. Once cooked, place the bacon on a plate lined with a paper towel.
- Reduce the heat to low and drain off and extra grease from the bacon. Then place one half of the bread onto the skillet with the mayonnaise side down.
- Top the bread with 2 slices of cheddar cheese, then 2 slices of bacon and then place the other piece of bread on top of cheese with mayonnaise side up.
- Heat the sandwich for 2-4 minutes until the bottom piece of bread is golden brown. Then flip with a spatula and cook the opposite side sandwich for 2-4 minutes.
- Place the sandwich onto a plate and let it rest for 2-3 minutes so that the cheese is not too hot. Cut in half and enjoy!
Can I Store Leftover Grilled Cheese?
Definitely store your leftovers! Allow the bacon grilled cheese to cool completely, then transfer to a plastic bag or an airtight container. If it’s even a little warm, it will create condensation that will make the bread soggy.
FRIDGE: Store leftover grilled cheese with bacon in the refrigerator for 3-4 days.
FREEZER: Wrap grilled cheese tightly in plastic wrap or aluminum foil and then place into a freezer bag. Freeze for 2-3 months and allow to thaw before reheating.
Keep in mind that grilled cheese is best fresh. While leftovers can be stored, a fresh grilled cheese is the more melty and will be a lot more crispy on the outside!
Can I use butter instead of mayo?
You most definitely can use butter if you prefer. I recommend spreading really soft butter over the bread, just like you would with the mayo. If you do not have a spreadable butter, then just put some butter in the skillet!
Do I have to cook my bacon in a skillet for bacon grilled cheese?
Not at all! The main reason I like to use a skillet to cook my bacon is because the bread soaks up a little bit of grease that is left in the pan. It adds extra bacon flavor to this grilled cheese, which I’m all for! However, if you do not want to cook your bacon in a skillet, you can make air fryer bacon or even make bacon in the oven. Just add a touch of butter or oil to the hot skillet before adding the grilled cheese!
What to serve with bacon grilled cheese
This would be the perfect thing to serve with cozy tomato soup! You can also serve with some crispy air fryer french fries or tater tots too. I love to dunk bacon grilled cheese in creamy potato soup.
It’s a classic pairing for a comforting bowl of minestrone soup or meatball soup. Or simple eat it on it’s own for an easy lunch or light dinner!
Pro Tips for the Best Grilled Cheese!
- Don’t overcook your bacon to where it’s extra crispy or it’ll just shatter when you bite into your sandwich. We recommend just slightly crispy, but not underdone, for the best grilled cheese.
- Use thick slice cheddar for the most melty, gooey results. You can also use more than two slices of cheese if you want!
- I highly recommend using thick slice bread. However, if you only have regular bread just reduce the amount of mayo and maybe use only one slice of cheese so that it doesn’t fall apart.

- 4 Tablespoons mayonnaise
