Creamy overnight oats with almonds and strawberries! This Strawberry Overnight Oats recipe is an easy and healthy breakfast that you can make ahead for easy meal prep. Perfect for on the go mornings that are busy.

Are you familiar with overnight oats? They are made by soaking oats with milk, refrigerating the mixture overnight, and consuming straight from the fridge in the morning. These Strawberry Overnight Oats have strawberries, almond butter and sliced almonds in them to!
Warm the jar of oats in the microwave right before eating if you like them warm instead of cold. It’s like having a bowl of creamy and flavorful oatmeal, but no cooking is involved.
The key to making oatmeal palatable is to sweeten and flavor it. Oats are really a blank canvas. This oatmeal is flavored with strawberry and almond. It is made with almond milk, a touch of almond butter, sliced almonds, strawberry jam, and fresh strawberries.
I love the combination of flavors here, but feel free to swap around ingredients to make it suit your tastes. You can use other berries, you can skip the almond butter, or you can even swap the almond milk for an equal amount of regular milk. The key is to make it just the way you like it. Use my recipe as a base and go from there. 🙂
Ingredients Needed
- Old Fashioned Oats – Instant/quick/steel cut oats don’t work well in overnight oats because they don’t absorb the liquid the same way as old fashioned oats do.
- Vanilla Almond Milk – This can be sweetened or unsweetened, but any type of milk will work.
- Chia Seeds – Thickens up the oat mixture plus adds filling fiber.
- Strawberry Jam – Gives it the strawberry flavor. Feel free to try other flavors of jam in this.
- Honey – A great natural sweetener to use because it’s liquid and blend well with the oats. Another great option would be maple syrup or even stevia or monk fruit would work.
- Almond Butter – The perfect addition to make it even creamier.
- Garnish – To really bring out the strawberry and almond flavor we topped ours with sliced strawberries and slivered almonds, but this is optional.
Only 3 Steps to Prepare!
- Combine – In a jar or bowl, combine oats, almond milk, chia seeds, jam, and honey. Stir until well combined and all the oats are covered in liquid.
- Refrigerate – Divide into small glass jars, cover and refrigerate overnight
- Serve – Warm oats in the microwave, if desired. Add almond butter and little more jam and stir just slightly so that you can see the swirls. Top with sliced almonds and strawberries.
Tips and Tricks
- It’s best to let these soak overnight, but in a pinch they will be ready in about 2-4 hours. The oats won’t be quite as soft with the shorter soak time, but they are still delicious.
- Store these in an air tight container in the refrigerator and they will last up to 5 days. The longer they sit the softer the oats get, so we recommending enjoying them within 3 days.
- These are a great Sunday Meal prep idea for breakfast. Make a batch or two and have them last the entire week for breakfast.
- Hot or Cold? It’s really up to you! I prefer warming them up but a lot of people eat them cold straight out of the jar.
- Mix up the jam flavor and the toppings for even more fun. These are also great topped with bananas or chocolate chips! Or make it Elvis style with peanut butter instead of almond butter, grape jelly and bananas.
- Don’t like chia seeds? Leave them out, but it does help to thicken the mixture and give it a boost of fiber!
This oatmeal has been a go-to for my family lately. I double or triple the recipe below and I fill individual jars with it. In the morning all I do is warm them up in the microwave and add a splash of milk.
I hope you enjoy this healthy and hearty breakfast as much as we have.
