Chicken Bacon Ranch Meatloaf ~ Delicious, Easy, Comfort Food! Loaded with Chicken, Bacon, Cheese and Ranch!

Let’s talk meatloaf my friends. Growing up in the Midwest, it was pretty much a staple on our dinner table. My mom served several different versions of it and they were always delicious. My family was the true, born on the farm, meat and potatoes type of family! I’m sure you are all thinking nothing much has changed with me! Trust me, I get more out of my box than just meat and potatoes.
As many versions of meatloaf were floating around our extended family, none of them used ground chicken. None. Boy, oh boy were we missing out in life without a version of meatloaf with chicken!
My husband is a true Chicken, Bacon, Ranch obsessed person. Anything and everything with this combo he is dying over no matter what restaurant we are at. I was so excited to come up with this twist on meatloaf and surprise him with it. As I set out on my mission to impress my hubs, trust me the way to that man’s heart is through his belly, I grabbed Gold’n Plump Lean Ground Chicken from my grocery store along with a few other ingredients. Ground chicken has less fat than regular ground beef, adding a leaner twist to standard meatloaf. This product is truly a versatile and convenient option for dinner, the only kind that I have time for in my life!
After the meatloaf is done baking, drizzle it with ranch dressing. This makes it a little fancy if you are looking to impress your family tonight. Plus can you really go wrong with anything that is drizzled in ranch? I think not. Ranch is like a side dish in my life.
Plus, if you live in a horribly cold state, like me, you are all about enjoying comfort food right now. After you impress your family with this, they will return the favor by doing the dishes, cleaning the kitchen and letting you relax in front of the fireplace. I’m sure of this. Aren’t you?

Chicken Bacon Ranch Meatloaf
Delicious, Easy, Comfort Food! Loaded with Chicken, Bacon, Cheese and Ranch!

Ingredients
- 1 lb 93/7 Gold’n Plump lean ground chicken
- 1/2 c. panko bread crumbs
- 1 Tbsp dried onion
- 1 1 oz pkg ranch dressing mix
- 1 3 oz Real Bacon Bits, reserve 1/4 c. for topping
- 1 egg lightly beaten
- 1/2 c shredded Colby cheese
- 2 Tbsp ranch dressing
Instructions
- Preheat oven to 350 degrees.
- In a large bowl mix together chicken, bread crumbs, dried onion, ranch dressing mix, bacon bits and egg. Spread in greased loaf pan.
- Sprinkle with cheese and reserved bacon bits. Bake for 50 minutes.
- Remove from oven and drizzle with ranch dressing.
