I am so ready for my kids to go back and we still have several weeks left! I love summer and all but man, I need some peace and quiet! Plus, school starting means fall is around the corner! And I love fall!
Yep, I bought crayons and scissors and everything online.
Had to make 3 separate Target orders because they’d only let me put so much in my cart but it is officially done and now I don’t have to worry about dragging all 3 kids with me to actual Target. You know how that ends.
Them, crying because they didn’t get what they want. Me, crying because I somehow ending up spending hundreds more than I had intended.
Anyway, let’s talk meatloaf!
This recipe is not only really delicious, it is also really simple to make. It will take you about 15 minutes to put together and then about 45 minutes to bake. So in under an hour, you have a delicious, cheesy meatloaf the whole family will love.
There is a ton of flavor in this meatloaf thanks to the onion and the garlic and the worcestershire sauce. Not to mention the cheese! Instead of shredded cheese, I used cubed cheese so you get little pockets of cheesy goodness when you slice into it! And then, of course, every meatloaf needs a topping and since this one has so much going on inside, I kept it simple with just a light covering of ketchup.

Cheesy Meatloaf
Ingredients
- 1 teaspoon olive oil
- 1 onion diced
- 1 clove garlic minced
- 1 pound lean ground beef
- 1/4 cup bread crumbs
- 1/4 cup milk
- 1/4 cup ketchup divided
- 1 tablespoon worcestershire sauce
- 1 egg lightly beaten
- salt and pepper
- 1/2 cup cubed sharp cheddar
Instructions
- Preheat oven to 400F. Line a rimmed baking sheet with parchment paper.
- Heat the olive oil over medium heat. Add onion and cook until translucent, stirring occasionally. Once softened, add garlic and cook for another 30 seconds, just until fragrant. Remove from heat and scrape the mixture into a large mixing bowl. Let cool slightly.
- To the bowl, add ground beef, bread crumbs, milk, 2 tablespoons ketchup, worcestershire sauce, egg, salt and pepper, and cheddar cubes. Mix until just combined, being careful not to overmix.
- Shape the mixture into a loaf on the prepared baking sheet. Spread remaining 2 tablespoons of ketchup on top.
- Bake 40 - 45 minutes or until the inside reaches 160F. Let cool for 5 minutes before slicing and serving.

using parchment paper is actually preferred if they don’t have a silicone mat. maybe you used cheap parchment paper, did it wrong, but telling people not to use parchment paper cause you had a bad experience is silly.

IDK why this recipe has so many five star ratings. Loaf was raw inside if you follow suggested time. Flavor was bland. Not sure exactly what is missing but a cheap TV dinner meatloaf is better and much cheaper and easier to make

Obviously you don’t know how to cook. Ovens vary and you have to adjust temperature and time based on your oven. I cook mine for an extra 10-15 mins.

Yes, oven temps and times may vary! Definitely suggest using a meat thermometer.

Sandy, really!? Common sense tells you that you should adjust your oven temp and cooking time according to your personal oven. I’m going to go out on a limb and state you only came on here to be rude due to the fact your cooking sucks so you wanted to blame someone else for your incompetence. Maybe you should stick to frozen dinners and Pop Tarts.

I’ve made this recipe several times but instead of ketchup, I use BBQ sauce. I have used different cheeses each time but I say use whatever cheese you like the best. I usually will mix a 1/4 cup of shredded cheese in the mix and cubed cheese in center – delicious!!

I would back the temperature down to 350 degrees and bake for 1.5 hours or until the internal temp reaches 160 degrees.

just plopped the meat in a loaf pan without parchment paper. Let it sit a few minutes before cutting. IT WAS DELICIOUS!! I am not usually a fan of meat loaf, but this was SO TASTY! Served it with baked potatoes that cooked well at the same temperature as the loaf. Will definitely make it again. THANKS!

You could use a loaf pan, I typically use a rimmed baking sheet because the grease then drains away from the meatloaf instead of staying contained in the loaf pan. It is really personal preference.

Meatloaf is always quick to mix together and get into the oven, and it’s always convenient to make because it doesn’t require things I don’t normally already have in my pantry or freezer. This meatloaf did not disappoint on prep, or flavor. My family loved it served with some homemade mac & cheese and steamed broccoli.

I used shredded sharp cheese but I couldn’t taste it.but it was delicious kinda like a cheese burger. Used a baster to suck the grease out.

Could you use Velveeta also?

Instead of mixing the cheese in with it. I made the meat loaf then stuck the cheese in and closed it up.
