This Corn Dip Recipe is addictively good and it’s so easy that any can make it for a quick snack or appetizer. This recipe is full of flavor from corn, tomatoes, green onions and cheese. You will be addicted to it in no time.

So I’m guessing we are all cookied out after the big Christmas Holiday…am I right? I love me some Chocolate Dipped Peanut Butter Pretzels but my there’s only so many I can eat.
I figure since party season is here we should move on to my love of dip. Dippity do dah, dippity do dah…. Tasty dips like Crockpot Buffalo Chicken Dip, Layered Taco Dip, Spinach Artichoke Dip, and Kickin Ranch Corn Dip. YUM!!!

Ingredients for Corn Dip
- Rotel – Diced tomatoes and green chilies to give this dip it’s flavor.
- Corn and diced peppers – Often called Mexicorn, a blend of corn and chopped red and green bell peppers. You can also use southwestern or fiesta corn.
- Green onions – For color and taste.
- Sour cream – We recommend full fat sour cream or it can get watery.
- Mayonnaise – Forms the base of the dip.
- Mexican cheese – You could also use a mild or sharp cheddar cheese, or Colby Jack.
- Tortilla chips – Make sure they are thicker so you can scoop the dip easier!
How to Make Corn Dip
- Mix all the ingredients together in a bowl and refrigerate.
- Serve with tortilla chips and your favorite dippers!

We do not recommend freezing this dip. The texture will not be the same after it is frozen.
How Long Can You Leave this Dip out at a party?
A cold dip should only remain out at room temperature for two hours. This is called the “danger zone”, which is room temperature.
If you are serving this and it will be sitting out for a period of time we recommend taking a larger bowl and putting ice in it then setting the bowl of dip on top of the ice to keep it cold.

Ingredients
- 10 ounce can original Rotel drained
- 2 cans corn and diced peppers 15 ounces each, drained
- 3 green onions chopped
- 1 cup sour cream
- 1 cup mayonnaise
- 2 cups Mexican cheese shredded
- Tortilla chips
Instructions
- In a bowl mix all ingredients together and chill.
- Serve with tortilla chips.

I’m sorry it’s taken so long for someone to reply to your question. “ROTEL” is a brand name for some diced tomatoes with mild green chiles so you could mix up some of your own if you don’t have the brand available.

Oh I know how you feel about all of the cookies and sweet treats! I’ve been eating them sparingly for the past two weeks and I feel so much better! Ha, I had to start before Christmas because I was feeling bleh. I limit myself to one cookie per day. LOL
